Chicken Douchi Stir Fry

A savory stir-fry featuring chicken thigh and fermented black beans.

Instructions

  1. Heat oil on HIGH heat, add ginger & garlic, douchi. Saute until fragrant ~5 minutes.

  2. Add chicken and cook until takes on color, then deglaze with soy sauce and Shaoxing wine.

  3. Reduce heat to MEDIUM-LOW, until chicken cooked through and sauce is reduced.

  4. Add red pepper, cook slightly, avoiding losing crunch, garnish with scallion.
