Cowboy Chicken Salad
A smoky, tangy chicken salad with black beans, corn, cherry tomatoes, and pickled jalapeños in a lime-spiked mayo dressing.
Ingredients
- 1/2 cupmayonnaise
- 2 tablespoonsfreshly squeezed lime juice, from 1 medium lime
- 1 1/4 teaspoonskosher salt, plus more as needed
- 1 teaspoonsmoked paprika
- 3/4 teaspoongarlic powder
- 1/2 teaspoonchili powder
- 1/4 teaspoonground cumin
- 1/4 teaspoonfreshly ground black pepper, plus more as needed
- 1 poundshredded, cooked chicken
- 2 cupscherry or grape tomatoes, halved or quartered if large
- 1 (15-ounce) canblack beans, drained and rinsed
- 1 cupthawed frozen corn kernels
- 1/4 cup plus 2 tablespoonspickled jalapeños, coarsely chopped
- 1/4small red onion, finely chopped
- optionalchopped fresh cilantro leaves, for serving
Instructions
Whisk together the mayonnaise, lime juice, kosher salt, smoked paprika, garlic powder, chili powder, ground cumin, and black pepper in a large bowl until combined.
Stir in the shredded chicken, cherry tomatoes, black beans, corn kernels, pickled jalapeños, and red onion. Taste and season with more kosher salt or black pepper as needed. Garnish with chopped fresh cilantro if desired.
