Peanut Butter³ Cookies

Intensely nutty cookies made with natural peanut butter, peanut butter chips, and optional roasted peanuts for extra crunch.

  1. Heat oven to 350°F. Line 2 baking sheets with parchment paper.
  2. In a small bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, using a wooden spoon or spatula, mix butter and both sugars until smooth and creamy. Add peanut butter and stir until incorporated. Add egg and vanilla, stirring until well combined.
  4. Add flour mixture all at once and fold gently until no dry bits remain. Fold in peanut butter chips and peanuts (if using) until evenly distributed.
  5. Using a small cookie scoop or measuring tablespoon, drop rounds of dough onto prepared sheets, spacing 1½ inches apart.
  6. Bake until just dry on top and set around edges, 10 to 11 minutes. Do not overbake. While first batch bakes, prepare second sheet.
  7. Cool completely on wire racks.

Store in an airtight container at room temperature for up to 1 week
