Peanut Butter³ Cookies
Intensely nutty cookies made with natural peanut butter, peanut butter chips, and optional roasted peanuts for extra crunch.
Ingredients
- 65gap flour
- 1/2 tspbaking powder
- 3/4 tspsalt
- 113g, 1 stickunsalted butter, softened
- 110gwhite sugar
- 90gbrown sugar
- 260gnatural salted peanut butter, room temperature
- 1egg
- 2 tsppure vanilla extract
- 50gpeanut butter chips
- 100glightly salted roasted peanuts
Instructions
- Heat oven to 350°F. Line 2 baking sheets with parchment paper.
- In a small bowl, whisk together flour, baking powder, and salt.
- In a large bowl, using a wooden spoon or spatula, mix butter and both sugars until smooth and creamy. Add peanut butter and stir until incorporated. Add egg and vanilla, stirring until well combined.
- Add flour mixture all at once and fold gently until no dry bits remain. Fold in peanut butter chips and peanuts (if using) until evenly distributed.
- Using a small cookie scoop or measuring tablespoon, drop rounds of dough onto prepared sheets, spacing 1½ inches apart.
- Bake until just dry on top and set around edges, 10 to 11 minutes. Do not overbake. While first batch bakes, prepare second sheet.
- Cool completely on wire racks.
Store in an airtight container at room temperature for up to 1 week
