Tortellini Soup
A hearty Italian-inspired soup with sausage, vegetables, and cheese tortellini.
Ingredients
- 1 poundsausage
- 3carrots, chopped
- 1medium onion, chopped
- 1 28ozcanned crushed tomato
- 1zucchini
- 5 clovesgarlic, minced
- 5oztortellini per serving
- 1 canwhite beans, rinsed
- 2cbaby spinach, rough chop
- 1tspdried oregano
- 1tspcrushed red pepper
Instructions
Heat a small bit of olive oil in a dutch oven. Brown sausage, remove from pan and drain, leaving some oil in pan.
Sauté onion and garlic, giving onions head start before adding carrots. Add dried oregano and let bloom until fragrant.
Add chicken stock and crushed tomato, then bring to a boil.
Reduce to low and simmer for 15 minutes.
Add canned beans and simmer for 5 minutes.
Add zucchini and simmer for 5 minutes or until tender.
Add spinach and stir until wilted. Either cook tortellini in broth or separately and add.
Note: If storing leftovers, tortellini will swell and absorb all remaining liquid, so consider cooking separately.
